Char caviar is harvested from the end of October until the beginning of December, whereby the considerate and species-appropriate keeping of the fish is a highly important concern of ours. Our fish are not harmed in any way during the harvesting process, and the roe is only harvested at the peak maturity level.

 

You are therefore presented with a product from happy fish, whereby the quality of the product is emphasised only by a mild seasoning with top quality salt. This allows our char caviar to keep for up to 6 months, when kept at a constant temperature (+3 to -3 degrees celsius). We sell and ship the caviar directly from our restaurant and offer the following products:

It is always a delight to experience head chef Michael Sicher’s newly dreamt-up creations using char, trout, Carinthian crayfish, herbs and aromas. Putting the choice of accompanying wines into the hands of our sommelier Wolfgang Sicher gives you the assurance of choosing the perfect wine to suit both your dish and your taste.

 

A TRIP INTO THE PAST, THE HISTORY OF OUR RESTAURANT

 

In 1972, Alfons Sicher and his wife Erna took over an old sawmill belonging to his father, and turned it into an inn, together with his artistic friend H. Philip. Thanks to the great amount of effort put in by the family, the inn became a cozy top-quality restaurant with outdoor seating in the picturesque garden in of the quietest and most culinarily active spots of Carinthia. The only sounds to be heard are the soft splashes of the Weißenbach stream, which provides our own fishponds with fresh spring water, and the chirping of the birds. With the culinary skills of Michael Sicher, the restaurant has become one of the best fish restaurants in Austria and is well-visited by lovers of the creative and exquisite cuisine. The delicate “char caviar”, that is sought after in all of Europe, further makes the restaurant a point of attraction.

 

In 1994, Michael and his younger brother Wolfgang took charge of their parent’s business – and to date they have stuck together as a team and gladly help each other with words and deeds. Their partners now also provide great support with the restaurant, and the two grandchildren Sophia and Paul are always there to create a good atmosphere.

 

Michael constantly puts in effort to give the local produce a high international value by letting them play the “main role”. The kitchen at Sicher is blessed with the very freshest produce from its own farming (not only fish and crayfish, quail and chickens, but also a herb garden with over 200 types of herbs and a vegetable garden), as well as access to local produce from the surrounding region.

The sovereignty with which Wolfgang Sicher selects exceptional wines to accompany the dishes is also astounding.
